Aligoté is Burgundy’s second white grape. Often overshadowed by Chardonnay, it produces zesty, high-acid wines with citrus, green fruit, and a distinctly mineral edge. It’s also the traditional wine used in the classic Kir cocktail, mixed with crème de cassis.
